Taikan Sake Brewery is in Yamanashi Prefecture. More than 40% of the mineral water in Japan comes from Yamanashi, and the city of Southern Alps has been designated as a special national place of scenic beauty. The brewery was founded in 1877 and has been brewing sake for over 140 years. “Taikan” brand was established 40 years ago. For the past 13 years, they have been growing Yamada Nishiki rice locally. They now use more than 95% rice made locally using the best quality water from the area.
