Takeshige Honke Sake Brewery is located in the Saku region of Nagano Prefecture, and it is on the Nakasendo Road, which was one of the five routes of the Edo period that connects Edo to Kyoto. The residences and 30 buildings of the brewery are registered as tangible cultural properties of Japan. Tokuzaemon Takeshige acquired the rights to brew sake at the current location in the first year of the Meiji era. The brewery’s distinctive feature is the kimoto-zukuri method. Kimoto-zukuri is a traditional method where, instead of adding a lactic acid culture, the brewer cultivates a natural lactic acid bacteria through a process called yamaoroshi.
